For the Tofu: 1 - 8 oz Super Firm Cubed Tofu (We have Publix so I use their Greenwise brand) 1/4 tsp of Chef Gone Mad Chicken & Fish 1/4 tsp of Seasoned Salt Sprinkle of black pepper For the Breading: 1 - 16 oz bag of Leftys Spices Fish & Chicken Mix (you won't use all of this for this meal but it's my goto for alot of my fried foods, so refrigerate the remaining mixture for later use) 1 tbsp Chef Gone Mad Cajun 1 tsp of Badia Garlic Powder 1 tsp Chef Gone Mad Chicken & Fish When ready to cook, set fryer to 355°
I fry in Refined Peanut Oil (Louanns is my goto)
1. Drain Tofu 2. Add Tofu to a bowl with 1/2 cup of water, 1/4 tsp Chicken & Fish, 1/4 tsp of Seasoned Salt, sprinkle of black pepper 3. Let marinate for no less than 1 hr, the longer the better 4. Drained seasoned Tofu and press all the water out using paper towels (my method is to line a plate with paper towel, add Tofu on top, then add another layer of paper towel and press until the liquid is pressed out.)
5. Mix Leftys, 1 tpsb of Cajun, 1 tsp Garlic Powder, 1 tsp of Chef Gone Mad Chicken & Fish together. 6. Lightly but completely coat each cube in breading. 7. Fry until Golden brown. Serve with Yum Yum Sauce or eat by themselves!
