Fried Cauliflower Rice

During my fast from carbs, this quick and easy vegan dish was my saving grace!

Serves 5

Cooking time: 10 minutes

24 oz. of pre-packaged cauliflower rice

1/8 cup grapeseed oil

1/4 cup chopped garlic (fresh)

1 cup chopped yellow onion

1 cup chopped portobello mushrooms

1 cup chopped green bell pepper

1/4 cup shredded carrots

1 tbsp. garlic salt

1/4 tsp ground black pepper

2 tsp liquid aminos (soy sauce substitute)

  1. In a wok or stock pot, heat 1/8 cup grapeseed oil over medium high heat.

  2. Once oil is hot, add 1/4 cup of chopped garlic, the cups of chopped yellow onion, mushrooms & green bell pepper.

  3. Saute' until onions are translucent (about 5 minutes or so)

  4. Add your rice, carrots, garlic salt, & liquid aminos. Mix thoroughly.

  5. Cook for 5 minutes, tossing frequently until cauliflower rice is tender

  6. Season with black pepper, toss again and SERVE!
